What is the specific frequency, modulation method, and protocol that is used to communicate between sensors and the smarthub/base receiver?

At least in the US it's 433.92 Mhz, which is listed in the specs.  The modulation is OOK (on off keying).  The "protocol" is Acurite specific data message.   There are projects that can receive the data with an RTL-SDR USB stick or a Arduino with a RF receiver.

The center frequency is 433.92MHz

Modulation is ASK/OOK

"Protocol" is a bit harder to answer.  You basically have to figure out how the data is laid out for each device and manufacturer.  Some of the Acurite hardware is figured out, some of it isn't.

You might refer to the RTL_433 software package and/or its user group for more details.
